Ingredients:
Serves 6
2 15-oz. cans beans, drained and rinsed
½ c peas
1 green pepper, diced
½ red onion, sliced thin
¼ c. fresh parsley, chopped
¼ c fresh chives, chopped
1/3 c. wine vinegar
¾ c. olive oil
1 clove garlic, pressed
½ tsp pepper
Instructions:
- Combine beans, green pepper, onion and parsley in a large bowl.
- Blend together remaining ingredients and pour over bean mixture. Mix thoroughly, cover and chill well.
