Ingredients:
14 ounce package firm tofu, drained well and mashed
2 green onions, thinly sliced
¼ cup dill pickles, chopped
¼ cup canola mayonnaise
2 Tbsp yellow mustard
1 Tbsp tamari soy sauce
½ tsp cumin
½ tsp turmeric
½ tsp garlic powder
16 slices whole grain bread
8 lettuce leaves
8 tomato slices
Instructions:
- Combine tofu, onion, and dill pickles.
- Mix together mayo, mustard, soy sauce, and spices in separate bowl then stir into tofu mixture. Adjust seasonings if necessary.
- Serve on whole-grain bread with lettuce and sliced tomatoes.
