Serves 12
Ingredients:
24 oz Soba noodles
1/2 cup toasted sesame seeds
1 cup chopped cilantro
3 cups chopped red cabbage
2 cups shredded carrots
1/3 cup chopped fresh chives
1 1/2 cups diced cucumber (peeled)
Dressing:
4 tablespoons toasted sesame oil
6 tablespoons tamari
6 tablespoons balsamic vinegar
3 tablespoons agave syrup
Instructions:
- Cook soba noodles according to package. Drain and cool completely.
- Combine dressing ingredients in a separate bowl, whisk thoroughly.
- Pour dressing over noodles in a large bowl. Toss gently with remaining ingredients.
- Serve cold.
If you miss meat, seitan can be a happy substitute for you. A wheat-based product, it is versatile and takes on the flavors that you add to it.
Sesame-Ginger Seitan
Serves 8
Ingredients:
5 tablespoons tamari
3 tablespoons sake
3 tablespoons mirin
2 tablespoons freshly grated ginger
2 cloves of garlic, pressed
16 oz seitan, sliced into ΒΌ inch sections
2 teaspoons sesame oil
2 teaspoons canola oil
Instructions:
- Combine all ingredients (except seitan and 1 tsp oil) in a medium-sized bowl.
- Heat 2 tps canola oil in a saucepan over medium heat.
- Add seitan and stir-fry, gradually adding the marinade 1 tablespoon at a time.
