3 cups frozen berries
½ cup tart cherry concentrate
½ cup dried apples, chopped
¼ cup cornstarch or arrowroot powder
2 cups old-fashioned rolled oats (not instant)
¾ cup whole-wheat pastry flour
¾ cup chopped almonds or pecans
⅛ tsp sea salt
¼ cup walnut oil
¼ cup brown rice syrup
½ tsp vanilla extract
1. Preheat oven to 375 degrees F.
2. Combine frozen berries, cherry concentrate, and dried apples in large saucepan. Bring to
a boil, reduce heat to medium low, and simmer 5 minutes.
3. Remove mixture from heat, and stir in cornstarch. Spoon into 9x9-inch baking dish or 9-
inch pie plate.
4. In a separate bowl, stir together oats, flour, nuts, and salt. Whisk together oil, rice syrup
and vanilla in small bowl. Stir oil mixture into flour mixture until it clumps together to
form a crumbly mixture.
5. Crumble topping over berry filling. Place pan on top of cookie sheet in oven to catch any
drips. Bake 45 minutes, or until topping is golden brown. Let stand 10 minutes before serving.
