Orange Pan-glazed Tempeh Recipe

Ingredients:
1 cup freshly squeezed orange juice (3-4 large juicy oranges)
1 tablespoon freshly grated ginger
2 teaspoons tamari (or soy sauce)
1 ½ tablespoons mirin (rice wine) or rice vinegar
2 teaspoons maple syrup or other desired sweetener
½ teaspoon ground coriander
2 each garlic cloves, crushed
10 ounces of tempeh (or extra-firm tofu)
2 tablespoons olive oil or vegetable broth/water
½ each lime
2 tbsp. cilantro, fresh, chopped
Directions:
1. Put the orange juice in a small bowl. Squeeze the grated ginger over the bowl to extract the juices, then discard the pulp. Add the tamari, mirin, and maple syrup, ground coriander, and garlic. Mix together and set aside.
2. Cut the tempeh (or tofu) into thin, bite-sized pieces, and if working with tofu, pat dry with a paper towel.
3. Put the olive oil or vegetable broth in a large frying pan over medium-high heat. When the oil is hot but not smoking, add the tempeh and fry for 5 minutes, or until golden underneath. Turn and cook the other side for another 5 minutes, or until golden.
4. Pour the orange juice mixture into the pan and simmer for 10 minutes, or until the sauce has reduced to a lovely thick glaze. Turn the tempeh once more during this time and spoon the sauce over the tofu from time to time.
5. Serve the tempeh drizzled with any remaining sauce and a squeeze of lime, with the cilantro scattered on top. Serve over wheat berries or grain of choice, and a few handfuls of chopped fresh or sautéed greens.
Tips for cooking quinoa:
- Combine 2 cups liquid with 1 cup dry quinoa in a pot. Cover. Bring to a boil with the lid on for approx. 1 min. Leave lid on, turn off heat, and let quinoa sit for 15-20minutes untouched. The quinoa will be cooked.
- Season the quinoa of using a flavored cooking liquid, such as vegetable broth, tomato juice, or fruit juice.
- Add favorite seasonings before or after cooking, such as dried herbs, spices, vinegar, etc.
Tips for cooking wheat berries:
- Combine 2 cups liquid with 1 cup dry wheat in a pot. Cover. Bring to a boil with the lid on. Reduce to a simmer. Allow to simmer for about 1 ½ hours, or until soft and chewy.
- Season the wheat berries using a flavored cooking liquid, such as vegetable broth, tomato juice, or fruit juice.
- Add favorite seasonings before or after cooking, such as dried herbs, spices, vinegar, etc.
