Recipe adapted from: A Banquet of Health
Ingredients:
2 cups apple or other fruit juice (apple/pear juice or pomegranate juice are also good options! Or, dilute ½ this amount with an equal amount of water)
3 tablespoons agar flakes
1 cup Fresh or frozen fruit such as berries, apples, pears (optional)
Pinch sea salt
Optional: 1 tbsp. orange juice, 1 tbsp. ginger juice, 1 tsp. orange/lemon zest
Directions:
Pour the juice into a saucepan, and add the agar flakes. Bring to a boil and simmer until the agar dissolves completely. Place fruit into desired dish/pan. (If using frozen fruit, it is not necessary to thaw it, but cut any large pieces into smaller ones. Using frozen fruit considerably reduces the time needed for the gel to set.) Pour juice/agar mixture over fruit into a shallow dish and cool until set. Cool at room temperature. Then place in refrigerator until completely set (approx. 2 hr.).
