Each month, we post several delicious and healthy recipes on our facebook page. This month, our dietitians have shared some of their Thanksgiving favorites including a yummy Pumpkin Hummus and the Salmon dish below. Salmon with Ginger-Cherry Sauce
Serves 8
8 1 tsp 2 tsp 1/2 tsp 1/4 tsp 1/4 cup 2 tsp 2 tsp |
3-ounce wild-caught salmon fillets dark sesame oil apple cider vinegar salt freshly ground black pepper tart cherry concentrate low sodium tamari or soy sauce ginger root, grated Canola high-heat cooking spray |
- Preheat oven to 450 degrees.
- Place salmon filets in marinating pan or large zipper-top plastic bags.
- Place rest of ingredients in bag with salmon and gently toss together. Marinate for 10 minutes (or overnight if desired) in refrigerator.
- Spray 9x13 casserole or baking pan with cooking spray.
- Place salmon fillets in baking pan. Bake salmon for about 10-12 minutes or until salmon is easily flaked with a fork.
